The role is responsible for delivering high-quality, nutritious, and compliant meals tailored to the diverse dietary and medical needs of residents.This position plays a critical role in enhancing residents’ wellbeing through food by ensuring all meals meet nutritional standards, safety regulations, and individual care plans. <h3>Benefits</h3>Salary: $76,515 to $85,000 plus Super depending on experience <h3>Task & responsibilities</h3><h3>Menu Planning &amp; Nutritional Management</h3><ul><li>Design and plan seasonal and rotating menus in consultation with dietitians and clinical care staff&nbsp;</li><li>Develop specialised meal plans for residents with:&nbsp;<ul><li>Dysphagia (texture-modified diets)&nbsp;</li><li>Diabetes, allergies, and other medical conditions&nbsp;</li></ul></li><li>Ensure meals meet aged care nutrition guidelines and resident preferences&nbsp;</li></ul><h3>Food Preparation &amp; Production</h3><ul><li>Prepare and cook high-quality meals in accordance with approved menus&nbsp;</li><li>Oversee preparation of:&nbsp;<ul><li>Breakfast, lunch, dinner, and snacks&nbsp;</li></ul></li><li>Ensure consistency in portion control, presentation, and taste</li><li>Adapt meals based on residents’ individual requirements and feedback&nbsp;</li></ul><h3>Kitchen Operations &amp; Supervision</h3><ul><li>Manage and supervise kitchen staff including cooks, kitchenhands, and assistants&nbsp;</li><li>Allocate duties and monitor staff performance to ensure efficient kitchen operations&nbsp;</li><li>Train staff in food preparation techniques, hygiene, and safety standards&nbsp;</li><li>Maintain appropriate staffing levels and assist in rostering&nbsp;</li></ul><h3>Compliance &amp; Food Safety</h3><ul><li>Ensure full compliance with:&nbsp;<ul><li>Food Safety Standards (FSANZ)&nbsp;</li><li>Aged care quality standards&nbsp;</li></ul></li><li>Implement and monitor food safety programs (HACCP-based)</li><li>Maintain cleanliness and organisation of kitchen and storage areas&nbsp;</li><li>Conduct regular checks on food storage, handling, and temperature control&nbsp;</li></ul><h3>Procurement &amp; Cost Control</h3><ul><li>Manage ordering of food supplies and kitchen inventory&nbsp;</li><li>Liaise with suppliers to ensure quality and cost-effective purchasing&nbsp;</li><li>Monitor food costs, minimise waste, and maintain budget compliance&nbsp;</li></ul><h3>Resident Engagement &amp; Quality Improvement</h3><ul><li>Engage with residents to understand food preferences and improve satisfaction&nbsp;</li><li>Participate in resident meetings and feedback sessions regarding meals&nbsp;</li><li>Continuously improve menu offerings based on feedback and best practices&nbsp;</li></ul> <h3>Qualification & experience</h3>&nbsp;<ul><li>Minimum&nbsp;AQF Associate Degree, Advanced Diploma or Diploma&nbsp;or equivalent&nbsp;</li><li>At least 12 months of relevant experience as a Chef</li><li>Strong knowledge in nutrition requirements for elderly individuals&nbsp;</li><li>Demonstrated experience in menu planning and kitchen supervision&nbsp;</li><li>Sound understanding of food safety and hygiene regulations&nbsp;</li></ul>
